Introduction 

Easy to prepare, easy to digest… 

For a long time now, I have had digestive difficulties and can’t tolerate gluten in any form (including oats), or fibre (including nuts), or large amounts of fat. 

I need frequent, small portions; little and often suit me best. 

Most commercial products either miss the point and substitute wheat-type glutens for another sticky glue source, or bolster it up with tangling fibres, both of which I am unable to digest. 

Although I enjoy baking, it is more than just a hobby, it is an urgent need if I am to eat. 

I have found many recipes just too involved or lengthy, in terms of ingredients and cooking methods, and they often fall into the same traps of replacing wheat-type glutens with oats or gums and adding fibre. 

It is particularly difficult when you are struggling and just need something to eat right now. 

I wanted recipes for very quick and easy to prepare food, using the microwave oven I cook with all the time, which were free from all gluten and gums, low in fibre and fat, and in small, light portions. 

After many trials and adjustments, I came up with this collection. 

I wish to thank my wife Jane, our mutual friend Kevin, and Tom whose spirit guides me always, for all their encouragement and support, and for producing this book to enable me to share the results with you.
